Vegan gluten-free omelet – two ways

A nice fluffy omelet, pancake, crepe or a healthier version of pizza… Is this something you crave as a vegan? Or maybe you aren’t vegan but you’re looking for ways to avoid dairy and eggs? Or simply try something new, delicious and healthy?

I prepared two vegan gluten-free omelet recipes for you. It’s my go-to dinner for when I’m craving some comfort food. When I eat it I know that it will also be nutritious and really tasty. It’s also very well-known as my staple dish among my friends. However, it is very easy to undercook it and end up with porridge, so read carefully!

The easiest vegan omelet

3 heaped tbsp of chickpea flour
100 ml water
1 tsp soy sauce
1 tsp sriracha
1/5 cup of chopped veggies and mushrooms*

1/2 tsp of coconut oil (or olive oil) for frying

*I do not recommend veggies which contain a lot of water.
Onions, spring onions, bell peppers, mushrooms will work.
Spinach, cilantro, tomato, etc. – will not.

Mix all ingredients with a spoon. Make sure your pan is evenly covered with a little bit of oil and hot. Pour enough dough (should be a half of your mixture) to cover the pan, but don’t make it too thick. Cover with a lid and cook on medium heat for 6-7 minutes and then flip over. Do not touch the pancake before six minutes pass. Cook for another minute.

Fluffy and soft vegan crepe-style omelet

2 heaped tbsp of chickpea flour
1 tbsp of tapioca starch
1 tbsp of ground flax seeds
100 ml water

1/2 tsp of coconut oil (or olive oil) for frying

You can also add chopped vegetables to the mixture. The preparation is exactly the same as above, but your result will be softer and fluffier. Flax seeds are a known vegan binder, so if you’re a vegan omelet beginner, they will make it easier for you to cook and flip them. Enjoy!

What could go wrong?

There are three essential rules when dealing with the mighty Omelet.

  1. Do not add too much water or watery vegetables to the omelet.
  2. Cook the omelet on medium heat and cover it with a lid.
  3. Do not dare to touch before 6-7 minutes pass.
